One of my most favorite soups. Tender and juicy chicken breast, and your basic mire poix of celery carrots and onions all come together with garlic, and a heavy serving of gnocchi make this creamy and richly flavorful soup one that disappears in seconds! Serve it with some cheesy toast to be a little extra but it’s fantastic and incredibly filling all on its own.
This kit comes with everything you need to make one of the best pots of soups you’ve ever had! Easy to prep and quick to finish, this is the perfect dinner for a busy weeknight OR slow and leisurely Sunday.
Basic Kit Instructions: With a little oil in a heavy bottomed stock pot, sear the chicken breast on both sides then remove from pot. Add celery, carrots, onions to pot and stir well over medium high heat. Saute for 5 minutes. Add seasoning bag to pot and stir well. Wait 5 minutes then return chicken to pot. Add 4-7 cups water, stir and bring to boil. Reduce heat to medium low and let simmer for 25 minutes. Remove chicken and shred OR chop then return to pot. Add gnocchi, simmer 10 minutes. Stir occasionally. You can add half and half or a small amount of heavy cream at this point OR you can keep it dairy free without it.
Deluxe Kit Instructions: Occasionally we put out a kit that is more complex and intended for more of a longer cooking time. For this soup, prep veggies by washing then dicing. Many people will tell you to peal the carrots. I don’t. I feel like there is a tremendous amount of flavor and nutrients in the skin and we leave it on. Plus why spend that time getting rid of the good stuff? With a little oil in a heavy bottomed stock pot, sear chicken on all sides then remove and set aside. Add diced veggies to pot and stir well to combine, reduce heat and allow to cook for 10 minutes. Increase heat to medium high, add 1/4 of the white wine to deglaze the bottom of the pot, stir well. Continue cooking for another 5 minutes. Add another 1/4 of the wine and stir well. Add contents of seasoning packet, stir well then return chicken to pot. Add 4-7 cups water to pot, stir and bring to boil. Reduce heat to medium low and simmer for 25 minutes. Remove chicken, shed or chop then return to pot. Add gnocchi, simmer 10 minutes, stirring occasionally. You can add half and half or heavy cream at this point if youd like OR you can leave it out to keep the dish dairy free.
