Chicken thighs stewed in my own secret Honey Bourbon Gravy, delicious served over rice with a sprinkle of fresh green onions. A quick and easy dinner any night of the week!
Dump ingredients, not including cornstarch, in the crock pot with 2 c / 1 c / 1 c Hot water. Cook on high 3-4 hours or low 4-5 hours. Once chicken is done remove from sauce and set aside to cool slightly. Switch crock pot to high if not already. Add cornstarch to ½ c cool water and stir with a fork to combine well. Work out all lumps! Add liquid to bubbling crock pot and whisk to combine. When chicken is cool enough to handle, give it a rough chop and return to the crock pot and sauce. Let simmer in sauce while it thickens. Yum!
Rice: Bring 4c water and 2 tbs butter to a rolling boil in a medium sized sauce pot. Add rice, stir, cover immediately and reduce heat to low. Let simmer, covered for 25 minutes. DON’T PEAK! The steam is important! Fluff with a fork when done.
