Chicken Parm is one of my most favorite things. The crust is key….a soggy chicken parm is the best way to ruin a day. But to acheive that perfect crunch while also beng drenched in a hearty marinara and mountains of cheese is time consuming and labor intensive. Who has time for all those dishes?! I mean….I do, I have a kid who does them! BUT that doesnt mean I want to waste a whole day just to make my favorite meal. This is my lazy girl way of having in mere minutes, any day of the week, whats usually reserved for a weekend when youve got time to babysit a complex dish.
Coat chicken breast in olive oil and seasoning than set aside while you heat butter in a large, oven safe skillet. Sautee chicken breast just until it gets a nice lite brown color. Remove from heat and set aside, add sauce to same pan, layer chicken in single layer across pan. In a separate bowl toss panko with 2 tbs olive oil. Top each chicken breast with breadcrumbs, layer each breast with a generous handful of mozzarella, sprinkle parmesan over whole top. Broil for 5-10 minutes or until cheese is melted and breadcrumbs are browned and crispy. Get ready for the crunch! It’s so good!
