Description

Lentils stewed in tomatoes and rich red curry, with turmeric, garam masala, and creamy coconut milk.

 

Cook the lentils and set aside. You dont need to worry about measuring a certain amount of water, just fill a medium sized sauce pot half way with water and add lentils. Bring to a gentle boil than reduce heat to low and simmer until lentils are tender. Drain excess water and set aside.

Melt the butter in a large sauce pan over medium heat. Add onion and saute for a few minutes until softened and golden. Add all of the spices and stir fry for 1-2 minutes. Add the tomato puree, stir and simmer until smooth. Add the lentils and coconut cream, stir well to combine then simmer for an additional 15-20 minutes. The longer the better! The spices only get better! Serve over rice. If youre a cilantro person, this is GREAT with cilantro!
