Description
Bell peppers, onions, and pineapple, with meatballs over rice, topped with a scratch made sauce… so good, my family will eat this two nights in a row and its always George’s pick for his Birthday dinner!
Add bag of peppers and onion to hot skillet with a little olive oil. Cook until desired doneness, stirring frequently. Add bag of meatballs and sauce and stir to incorporate. Dish is done when heated thru…meatballs are fully cooked.
Rice: Bring 4c water and 2 tbs butter to a rolling boil in a medium sized sauce pot. Add rice, stir, cover immediately and reduce heat to low. Let simmer, covered for 25 minutes. DON’T PEAK! The steam is important! Fluff with a fork when done.
