Description

Ground beef, corn, peppers, onions and beans sauteed and well seasoned then topped with a blend of cheeses and a scratch made, super secret recipe corn bread crust.  Baked to toasted perfection in a little under an hour…dinner is easy and delicious!

 

Bake from frozen. Preheat the oven to 425 f.  Tent lid of pan or loosely cover with foil. Bake on a foil lined baking sheet for stability for 60-90 minutes. Uncover and bake an additional 15-20 minutes to toast the top. Delicious with sour cream and guac!

    Another filling and generously portioned meal. The cornbread topping was a little sweat for my tastes. Nothing a good dollop of sour cream, salsa, and jalapeños couldn’t balance out. Also, this is totally on me, but all the other meals I had instructed to thaw overnight. I made the assumption this was the same but it’s actually supposed to be cooked from frozen. If you goof like I did just tinfoil the edges because they’ll brown faster than the middle.

      I am so glad you enjoyed it! We call it tamale cake in our house, I hear you on sweetness…but you’re right! It totally balances out a spicy salsa. 🙂 Glad youre here my friend!
