Description
All beef meatballs in a secret Thai Curry Sauce with red peppers and sweet onions. This dish is pleasantly sweet and spicy and delicious over a bed of white rice or steamed zoodles!
Meatballs: ground beef, eggs, bread crumbs, herbs and seasonings.
Sauce: coconut milk, coconut oil, onions, garlic, ginger, red peppers, curry, seasonings.
Thaw overnight in fridge. Preheat oven to 375. Bake on a foil lined baking sheet for stability, covered with foil, for 30-35 minutes. Stir once or twice while heating. Serve over rice.
Rice: Bring 4 c water with a pinch of salt to a boil in a medium pot on the stove top. Add Rice, stir well, reduce heat to low and cover for 25 minutes. Fluff with a fork.
