Description
All the spicy goodness of a traditional red sauce enchilada without the meat! Black beans, bell peppers, corn, & red sauce layered with corn tortillas and piles of Monterey jack and cheddar cheese. Baked off easily in a little over an hour and dinner is served! Add a 16 oz side of our super popular scratch made refried beans and you’ve got a full meal.
Bake on a baking sheet for stability. This is best thawed overnight in the fridge. Bake at 375 for 45-50 minutes covered with foil or metal lid. Then uncover and bake an additional 10-15 minutes or until top is bubbly and well melted. Let rest for 10 or so minutes before serving.
