Fatty roast, celery, carrots, onions spiced and ready for the crock pot for a rich and hearty soup with the included wide home style noodles. This is one of my absolute favorites! I know I say that a lot BUT this one really is. Our son James spent months and months in the hosptial during his first few years of life. Which meant I also spent months and months living in a hospital room lounge chair. Trying to always find the silver linings I learned the cafeteria’s menu rotation and looked forward to my favorite days like elementary school all over again. Beef Noodle Soup day was always the BEST day! Steamy and warm it came with a fluffy dinner roll…I’d skip breakfast and be there RIGHT when lunch was served. If the right lunch lady was working she’d give me an extra roll for free. I think that’s probably why a warm biscuit still gives me a good rush of endorphines.
A good bowl of soup and a hot biscuit is the definition of LOVE.
